Water Purity

The most overlooked aspect of ice is that it will eventually melt into your drink.

• If you use standard tap water, the chlorine and minerals will taint the flavor of a fine spirit.
• We use filtered, distilled water to ensure a completely neutral taste.

Clarity and Density

Cloudy ice is caused by trapped air bubbles and minerals, which make the ice melt faster.

• Crystal-clear ice is entirely solid, meaning it is denser and dilutes much slower.
• Directional freezing—a method where water is frozen from the top down in an insulated container to force all air and impurities to the bottom—is how bartenders achieve this, using specialty molds like the True Cubes Ice Tray or a DIY cooler method.

Size and Shape Matters

Different drinks require different ice to balance the rate of melting (dilution).

• Large Cubes & Spheres (2-inch+): The go-to for spirit-forward drinks like Old Fashioneds, Negronis, or neat pours. Large ice melts slowly, ensuring your drink stays chilled without over-diluting.
• Standard 1-inch Cubes: Perfect for drinks you want to chill quickly without melting too much, like shaken cocktails or everyday mixed drinks
• Crushed / Pebble Ice: Ideal for tropical, tiki-style drinks (like a Mojito or Mint Julep). It melts quickly, adding necessary dilution and creating a refreshing frosty layer on the outside of the glass.

• Directional Freezing: Crystal clear ice is made through "directional freezing"—freezing water from the top down or using an insulated cooler. This pushes all the trapped air and impurities to the bottom of the block, allowing you to cut away the clear portion for your drinks.
